Natural Wine
Basically, “natural” winemaking is how it was done in the era before yeast could be purchased for fermentation. It relies on natural yeasts, which are floating in the air around us, finding their way into the wine vat.
Natural winemakers don’t filter their wines, either, so occasionally you may receive wines that are a bit cloudy on arrival. Rest assured that all you need is a little time and those little particles will make their way and settle on the bottom.
Depending on the winery or preference of the writer, these may also be called native, wild, or sauvage wines.
