Troon Syrah was made with 30% whole cluster. Including whole clusters can enhance syrah’s spice and pepper characteristics while broadening the mid-palate and bringing more freshness to the wine. Like all Troon Vineyard wines, the ferments started spontaneously from indigenous yeasts with no additives. The wine was handled gently during fermentation with just one punch-down or foot-treading per day, and the wine proceeded to ferment outside until it finished roughly three to four weeks later.

Ruby-red. Vibrant blackberry, potpourri and peppery spice scents are complemented by suggestions of candied licorice and smoky minerals. Concentrated black and blue fruit flavors show very good clarity and a touch of sweet floral pastilles. Silky, slow-building tannins add shape and grip to the long, sweet finish, which leaves a note of dark fruit liqueur behind.

The three components for the 2021 Kubli Bench Amber – Vermentino, Riesling, and Roussanne – were grown and harvested with the intention to make this skin-fermented “orange” or amber wine. Riesling provides ample aromatics to the final blend, along with a surprising amount of structural tannins. Skin-fermented vermentino adds richness, depth, and spice, while roussanne brings fruitiness, acidity, and additional layers of phenolic texture.

Because they are being grown for amber wines, we performed extra leaf removal on these vines in the vineyard to allow for more sun penetration into the fruiting zone, further developing the skin tannins of the grapes. These grapes were then harvested at slightly riper sugar levels with significantly enhanced phenolic development as compared to the same grapes harvested for a white wine.
Due to their varying ripening times, each variety was harvested and fermented separately in open-top fermentors outdoors, typically with about 30% whole-cluster inclusion. Fermentations generally reach dryness in 3-4 weeks, after which point they are pressed to neutral oak barrels, including a small number of acacia barrels, for aging and spontaneous malolactic fermentation. The wine stays in barrel until just before bottling, when it is racked to stainless steel tank and a small amount of SO2 is added. It is then bottled unfined and unfiltered.

Loaded with drink-now charm and bottled in clear glass to highlight its freshness. This is a nouveau-style wine crafted to be enjoyed with reckless abandon.

The 2021 Glou-Glou Grenache began with 100% whole cluster grenache placed in a stainless steel tank. This was sealed up for two weeks of carbonic maceration, after which time the tank was opened up and the grenache was foot-treaded to initiate spontaneous alcoholic fermentation. The wine then fermented on its skins for another week, and was then pressed back to another stainless steel tank. It fermented for another week or two in tank sans skins before going completely dry.

After resting on its lees for several months, the wine was racked to a clean tank and a small amount of SO2 was added. Because we keep the wine sealed up tight in a variable capacity stainless steel tank, we are able to prevent some of the CO2 from fermentation from degassing. Thus we are able to bottle this wine with just the slightest spritz of bubbles, unfined and unfiltered.
